    Whole bunch pressed and left to macerate for 24 hours

     

    Slow fermentation of 40-180 days with indigenous yeasts in 300ltr oak barrels

     

    Aged 8 months in old french oak

    Textured and rich, but with plenty of acidity and a striking minerality running through. Elements of flowers, spice and fruit are well balanced and refreshing with tons to offer in the finish.
