Hand harvested from old vines planted in blue marl
Direct pressing then a 48h cold settling before the must is racked off its gross lees which are filtered with perlite (a volcanic rock) and reassembled with the must.
Wild fermentation in stainless steel, then bottled with a crown cap for second fermentation.
Bottles are kept at 10°C for four months

Fresh, precise and full of juicy cherry and raspberry fruit. Violets and flowers are underpinned by fine bubbles. A great balance between sweet and dry and extremely refreshing.
