Hand harvested from 50 year old vines in clay-limestone, red clay and calcerous sandstone (spungone) soils at up to 350m altitude.
Whole berries are de-stemmed but not crushed
25-30 day maceration
Spontaneous fermentation in stainless steel and open top wood vats
Aged for one year in old 3500L Slavonian oak botti
Real character and depth are displayed in only the winemakers third vintage. A fine texture with a firm, chewy backbone, holding all the ripe cherry fruit and peppery spice together and into a long finish.
