Hand harvested from a small plot with 50 year old vines in volcanic soil planted at 400m altitude
Harvested in late October
De-stemmed and macerated for 30 days in fibreglass tanks before fermentation
Aged 2 years in concrete tank and ceramic amphorae
Bottled unfined and unfiltered
Dark and broody, yet retaining a fair amount of acidity and softened tannins providing a pleasant grippiness. Dark prunes and dates on the palate with violets, spice, herbs and earth all at play.
