Hand harvested grapes from  15 to 30 years-old vines, grown on clay-limestone and pebble soils on the Agly Terraces at a place called "Le Roboul"

 

The whole harvest is crushed, then infused and the alcoholic fermentation takes place with indigenous yeasts

 

Aging lasts 12 months in barrels

 

The wine is bottled by gravity in the lunar phase
