    Julien Guillot at the Clos des Vignes du Maynes makes this Mâcon Rouge from many different old varieties of Gamay, including Gamay "teinturiers" with thick skins and dark juice. The vines are, on average, between 60 and 100 years old, and they grow in a chalky terroir.


    After manual harvest and two sorting processes, semi-carbonic maceration takes 15 days

     

    Aged for 12 months in oak casks and demi-muids
