Hand harvested from vineyard located at 250m altitude, vines grow in volcanic clay and rich limestone soil

 

Fermented in 3 different ways: 1/3 whole bunch is direct pressed,

1/3 hamburger method (open vat fermented in three layers: foot trodden, whole clusters, and destemmed),

and the last 1/3 whole berries in amphora

 

Aged for 8 months in used oak barrel
