Hand-harvested from 3 different parcels within the 16 hectare Pago Callejuela at 62m altitude in Sanlúcar, in albarizo soils
The grapes arrived at the Bodega and were smoothly pressed into a 70yr old ex-Manzanilla cask where it was fermented with indigenous yeast and then left in the same barrel to age under a veil of Flor for 6 to 9 months

The Wine
Callejuela was founded in 1980 by Francisco Romero Blanco, after spending more than 20 years as a labourer. He started making musts in a small facility and selling to the large wineries for the production of Fino and Manzanilla Sherry. In 1998, the third generation of the Blanco family took over the vines and the winery, creating the brand Callejuela.
This is an unfortified stye of Palomino which sits under flor. The old way of producing this wine in this region. Aromas of flowers and white Mediterranean fruit. Vertical and saline on the palate with anise, marzipan, ginger and peach. Wonderfully fresh and vibrant.
