Hand-harvested from 90yr old vines at around 60m from a 1ha plot in the Pago Mahina

 

Fermented on skins for 7 days and aged in clay amphora for 9 months.

 

Bottled unfined, unfiltered, and with low to no S02 at bottling.

Bodegas Vinificate are two brothers that after studying chemistry at university decided to make wine largely without the use of synthetic chemicals. They are part of the movement of reviving non-fortified table wine from what is traditionally Sherry country. The Mahara Dorada showcases what Palomino Fino without fortification.

A powerful, savory and saline wine with an array of spice, herb and dried fruit aromas.
